I recently overheard a fabulous conversation in which a writer was inquiring with one of the interior designers of The Stoneleigh as to any aspects that made the hotel “green”. Instead of the usual answer encompassing various conservation policies or recycled items/programs within the hotel, the designer elequently noted ”The entire Stoneleigh Project as a whole is green, as the owners and investors opted to preserve and enhance the existing structure instead of dismantling the hotel and hauling it off”.
The Stoneleigh Project speaks not only to the ever growing ecological conern we see crisscrossing the news daily, but it also harps upon the spectacular sense of history and culture not easily duplicated in hotels today.

The Reigning Queen of Soul, Aretha Frankin, and her entourage departed The Stoneleigh Hotel & Spa this afternoon after enjoying various spa treatments as well as forays in Bolla and Bolla Bar. Aretha performed Wednesday night at The Nokia Theatre to a huge crowd of adoring fans all while keeping a fairly low profile in and around The Stoneleigh during her stay.

Bolla headlined this past week on Zagat.com (in the Zagat Buzz section) drawing attention to Chef Bull’s incredible modern Italian cuisine.

In addition to being a favorite hot spot of Avery Johnson’s since opening, Ross and Margot Perot were also seen enjoying Bolla with friends yesterday evening.

F!D Luxe’s Christopher Wynn showcased Bolla beautifully this week in his piece describing Chef Bull’s new hot spot inside The Stoneleigh that is taking Dallas by storm. Chef Bull also unveiled a new menu formatting for the illustrious Bolla. Upon hearing this information I felt it my personal duty to dive head first into the menu to do a little investigating.
In addition to piquing my humble attention, the renowned Senior Food Editor of Texas Monthly, Pat Sharpe, also popped in for a surprise lunch visit to see Bolla and Chef Bull in action. No pressure of course. According to Bull “The change was in an effort to create a fully comprehensive Bolla experience as well as draw upon the strengths of wine pairing and coursed menu design–the new format really allows us to present each dish in the perfect light”.
Streamlining the menu has also enabled Bull to flex his creative muscles even further in terms of adding extra flare to presentation and service. Chef Bull notes, “We have received rave reviews about the new menus. That being said, we will undoubtably see a few more tweaks as we perfect the menu even further–but that is all part of the creative process.” Preview Bolla’s new menus:
